Instead of your chocolate being too hot, your cream is too cold. In essence, it's re-solidifying the chocolate. Bring the cream to room temperature before baking and you will have solved your ingredient integration problem. This is also good as a general baking tip: ever had butter seize up upon the addition of cold eggs? Same thing. Unless a recipe specifies otherwise (like with pastry crusts where cold butter creates flaking), bring all ingredients to room temp before starting the recipe.
